ANTI-INFLAMMATORY AUTUM SALAD šŸ‚šŸ„—

This delicious salad is not only great for your health, itā€™s also a great salad dish for Thanksgiving dinner!




YOU WILL NEED:

šŸŽƒ One small Pumpkin šŸ„¬ Kale šŸ§€ Feta Cheese šŸ„œ Walnuts šŸŒŗ Pomegranate šŸŒæ Mint šŸ“Balsamic Vinegar šŸÆ Honey šŸ«’ Extra Virgin Olive Oil šŸ§‚ Salt and Pepper āœØDrizzle olive oil, salt and pepper over cubed pumpkin, I left the skin on for extra fiber but on you can peel it off. Roast in oven at 400F for 25-30 minutes. āœØTo make the dressing, combine extra virgin olive, balsamic vinegar, honey, and salt and pepper. āœØMix kale, roasted pumpkin, walnuts, feta, pomegranate, and mint in a bowl. āœØPour over dressing, toss salad well, and serve. Enjoy!
