YOU WILL NEED:
š One small Pumpkin š„¬ Kale š§ Feta Cheese š„ Walnuts šŗ Pomegranate šæ Mint š“Balsamic Vinegar šÆ Honey š« Extra Virgin Olive Oil š§ Salt and Pepper āØDrizzle olive oil, salt and pepper over cubed pumpkin, I left the skin on for extra fiber but on you can peel it off. Roast in oven at 400F for 25-30 minutes. āØTo make the dressing, combine extra virgin olive, balsamic vinegar, honey, and salt and pepper. āØMix kale, roasted pumpkin, walnuts, feta, pomegranate, and mint in a bowl. āØPour over dressing, toss salad well, and serve.
