This delicious salad is not only great for your health, it’s also a great salad dish for Thanksgiving dinner!


🎃 One small Pumpkin 🥬 Kale 🧀 Feta Cheese 🥜 Walnuts 🌺 Pomegranate 🌿 Mint 🍴Balsamic Vinegar 🍯 Honey 🫒 Extra Virgin Olive Oil 🧂 Salt and Pepper ✨Drizzle olive oil, salt and pepper over cubed pumpkin, I left the skin on for extra fiber but on you can peel it off. Roast in oven at 400F for 25-30 minutes. ✨To make the dressing, combine extra virgin olive, balsamic vinegar, honey, and salt and pepper. ✨Mix kale, roasted pumpkin, walnuts, feta, pomegranate, and mint in a bowl. ✨Pour over dressing, toss salad well, and serve. Enjoy!
